Butternut Squash Soup Recipe
So when we moved into my house I had this crazy list of things I needed an things I WANTED. Actually, I am going to do a whole post about it because that organization was on point ! Anyway, I made a list of things that I wanted for the house some of them were needs (like forks and knives) and some of them were wants (like a kitchen aid) because I didn’t need them immediately. One of the things on my list of needs was an Instant Pot. I had been eyeing one for a year but we never had the space for it so I decided to definitely scoop one up for the house. But I didn’t have to because my best friend in the world got me one for my birthday ! Thanks Chels ! This butternut Squash soup recipe was made using an Instant Pot but it can just as easily be made on a stove as well, it just takes a bit longer.
1-2 pounds of Butternut Squash – I bought it diced but you can buy fresh and cut and dice yourself.
1 Granny Smith Apple – cored, peeled and diced.
2 Carrots – peeled and diced
1-2 cloves of Minced Garlic. (Preference).
1 Cup Milk (I used whole for this recipe but if you don’t eat dairy Coconut milk is great!).
Vegetable Stock (I actually forgot this and mine turned out fine I used 1 cup of water).
If you’re using an Instant Pot – cut all your ingredients except for the milk and place them in the IP. I used manual and cooked it for 8 minutes. And then let the steam release for 5 minutes.
If you are using your stove top place your veggies, apple and stock in a pot and let simmer until they are all soft.
After that all you have to do is blend your ingredients with the milk and any spices of your choosing ( I suggest nutmeg and coriander but I didn’t have those because they were in a box somewhere). I used my immersion blender but you can just as easily put this in a blender or even use a hand mixer of your liking. You can top with your milk or leave as is and add any spices that you like !
